Dimitris’s research aims to address key challenges for the transformation towards a more sustainable food system. Main drivers include the elimination of food loss and waste, the stimulation of the bioeconomy, the efficient utilisation of natural resources, and the development of more sustainable and healthier foods.
The main topics of focus are:
- Bioprocess development for the production of food ingredients through microbial fermentation, e.g. proteins, colouring agents
- Valorisation of agri-food by-products to produce functional components, e.g., polysaccharides, proteins
- Development of biodegradable food packaging

Research funding and postgraduate supervision
Dimitris has been awarded research funding from various agencies, including the UK Biotechnology and Biological Sciences Research Council (BBSRC), Good Food Institute (GFI), Global Challenges Research Fund (GCRF), Innovate UK, European Institute of Innovation & Technology (EIT) Food, as well as industry. He has supervised 23 PhD students to completion.
